Meatless Monday: Cauliflower Mac n Cheese

This meal came about by accident.  I wanted to make a Hamburger Helper Skillet for dinner but neglected to purchase ground beef to make it.  I decided to instead use a head of cauliflower that I had on hand.  This is that recipe:

I cannot really call it a recipe since it is just following instructions from a box...however this could be adapted to a "from scratch" Mac n Cheese recipe.  During the week I don't always have that kind of time.

Step 1: Clean the Cauliflower by stripping away any greenery and the stems.


 Step 2: Chop into bite size pieces


Step 3: Prep a sauce pot with a small amount of water in the bottom and add to it garlic salt and pepper.

  

Step 4 add the chopper cauliflower and cover.  Set on stove top and steam until just barely fork tender.  You still want this to be semi-firm.


 

Step 5: Consult your box mix for additional steps and ingredients while the veggies steam.


  

Step 6: remove steamed cauliflower from the sauce pot and add to a skillet.  Then add the additional ingredients: my box asked for 2 cups of milk, 1 1/4 cups hot water, and 2 tbs butter (i used unsalted) the noodles and seasoning packet.
 
 Step 7: stir to combine and bring to a boil.  Once boiling cover and reduce to a simmer for 10-12 minutes.  The sauce will thicken as it cools down.

 Step 8: serve it up!  This is kid tested and mom approved.  What is not to like?  Cheese, pasta, and cauliflower!  We served this alongside green beans and rolls.
